Ah,to continue with the potato theme-from yesterday! What to do with leftover mashed potatoes? Easy. Just make these. Crispy on the outside and creamy on the inside- just what you need to go along with that hunk of meat. (or tofu)
Take “some” mashed potatoes (room temp) and add 2 eggs. Form into patties and dip in a bit of flour.
Cook in some melted butter until golden brown. Like this:
serve with a nice dollop of sour cream…. or a side of eggs, that would be good. Man, I am really on a ‘tato kick lately. Must be residual St. Patrick’s Day.
Now, something sweet:
