Carrot cake whoopie pies

Ingredients

  • 1 box carrot cake mix
  • 1 egg
  • 1/4 cup melted butter
  • 1/4 cup shredded carrots shredded on finest plate to tiny specks (sawdust)
  • For the filling:
  • 4 ounces cream cheese
  • 2 TBS heavy cream
  • 2 cups powdered sugar

Instructions

  • Preheat oven to 375
  • Combine the mix, egg and melted butter
  • Add the carrots and mix well
  • Allow to rest 15 minutes
  • Spoon by tablespoons 2″ apart on a parchment lined baking sheet
  • Bake 6-9 minutes or until center is soft and edges are set
  • Allow to cool and fill
  • For the filling:
  • Mix cream cheese, cream and sugar at medium speed until fluffy
  • Spread on the flat side of cookie, and top with another cookie
  • Makes 24
