Carrot cake whoopie pies
Ingredients
- 1 box carrot cake mix
- 1 egg
- 1/4 cup melted butter
- 1/4 cup shredded carrots shredded on finest plate to tiny specks (sawdust)
- For the filling:
- 4 ounces cream cheese
- 2 TBS heavy cream
- 2 cups powdered sugar
Instructions
- Preheat oven to 375
- Combine the mix, egg and melted butter
- Add the carrots and mix well
- Allow to rest 15 minutes
- Spoon by tablespoons 2″ apart on a parchment lined baking sheet
- Bake 6-9 minutes or until center is soft and edges are set
- Allow to cool and fill
- For the filling:
- Mix cream cheese, cream and sugar at medium speed until fluffy
- Spread on the flat side of cookie, and top with another cookie
- Makes 24
