It’s bunny season! Chocolate bunnies, that is.

Chocolate crunch bunnies, to be exact.

Because chocolate with a crunch is just plain fun. Don’t you think? Originally this post was supposed to be homemade cream eggs, you know- the ones with the “yolk”? Well, things didn’t go as planned and I came up with these babies- I mean: bunnies.

It all started with a Target run the day after Valentines Day; of course they had the Easter display up (It probably was up Feb 14th, but I wasn’t there, haha) Stores have a way of celebrating holidays simutaniously. Anyhow, I came across this cute silicone mold:

So adorable.

(It’s made by Wilton in case you want one, too) By the way, Wilton has no clue I exist… hmmm.

The packaging  had some cute little bunny cakes; but I had a darker, richer plan…

_DSC7492 Starting with some of this, and a little milk chocolate chips, and crisp rice cereal.

 

First: melting chocolate… make sure you follow the melting instructions: if you over heat chocolate it will seize. And, that’s no good. Basically if it says 50% power, do it!

Speaking of microwaves, when I was a kid I would read my mom’s old tattered light blue copy of Joy Of Cooking, when I melted chocolate I had to use a double boiler.This was before microwaves, and I actually remember when microwaves “came out”. Mind blown.

I also remember when cell phones came out-back in my teenage years, if you wanted to get a hold of someone that wasn’t home you “beeped”them. Do they even make beepers anymore? Hmmm…

Oh man,  I feel old when I ponder the technological advances I have seen in my lifetime.

Back to melting chocolate:

Stir in some crisp rice cereal, you know the one that “talks”? Snap, Crackle, Pop?

I like a lot of crunch, you can always add less if you prefer.

Now: placing it into the mold:

I was sloppy,  do y’all remember I have a 5 month old and an 18 month old?! The 18 month old is in her climbing stage and we have tile floors everywhere. I’m sure you get the picture. There are days when I really wish I had eyes in the back of my head.

Allow your mold to set in the fridge for an hour or so. During that time you can chase a toddler (like me!) or read a book and have some tea (my dream world)

Realistically , you’ll probably be cleaning up. Not that this recipe is messy, or anything. Just a bowl and spatula. (YAY!)
