vanilla cookie truffles

Ooo, I have been off lately. You see, I normally post at 5-6am. The house is quiet, kids asleep and the hubby is off to work. The past few days…has had someone waking up earlier than usual…

Why?

yes, we got a little parrot. A green cheeked yellow sided Conure. He hatched on my birthday. Coincidence? I don’t know…anyway, somebody has been waking up very early to say good morning to our new friend.

That has thrown me off schedule . Don’t worry- I am sure I will get back.

Now, about these truffles:

They are an adaptation of some cookies n cream ones I had seen somewhere else.

My hubby loathes Oreoes. (I know, crazy, right?!)

And I am fond of white chocolate- which some argue really isn’t chocolate and, I agree. Because I love chocolate, too.

Depends on my mood.

By the way, if you crave chocolate something fierce, it could mean you need more magnesium. Chocolate contains magnesium. Lil’ tidbit I remember from my other life…

Oh- you guys will love this. No baking. Very little mixing. Oh yeah… nice weeknight treat.

Or- if you dropped the plate of chocolate malt sandwich cookies and now have nothing sweet in the house. True story. the day after I made them- BAM on the floor. And %#@* !!! I couldn’t just call the dogs in to clean it up for me. (Chocolate, you know..) so I had to run the vacuum at 8pm. Not fun. Grrr.

So- get yourself a bag/package of cream filled cookies.

I decided to get all fancy and take a pic of store-bought cookies. I know, I am kinda a weirdo. That’s okay. I’m cool with that.  Weirdos unite!

Now: Destroy those pretty little cookies!!!Muahahahaha! (insert thunder and lightning)

sometimes, it’s fun to take perfect things and trash em. Say, bubble wrap. Now, that’s fun.

Make em like this:

Nice. Good job.

Melt 4 oz of cream cheese. I used the microwave. It worked.

Add to your destroyed cookies.

excellent. Now, make little balls. This dough is really easy to work with, too. Yay.

place them on a cookie sheet (okay, that’s my jelly roll pan..) on top of some wax paper. Freeze em for an hour.

Melt a bag of chocolate chips. Slowly in the microwave. You know the routine, 25 seconds, stir, 20 seconds, stir. Keep stirring till it’s nice n smooth.

I am so not a good dipper. Good thing I am not a star-I would mess up the Milky Way…

I tried a toothpick. No. I tried my fingers. NO. I tried a fork. Okay.

I huffed and I puffed and I got them all coated!

I had some extra crumbs, so while they were wet, I did a little sprinkling. you can, too.

There you go.

Want to know how cheap thrifty I am?

I salvaged the leftover white chocolate.  It may come in handy one day….don’t ya think?
