These are a little more nutritious than the standard with white potatoes, I don’t think y’all need the lecture on the tons of beta carotene and antioxidants in em…. you guys are smart, you know that!
The original recipe came from one of my favorite cookbooks; “The Black Family Reunion Cookbook” yes, I know it’s not a politically-correct title… but I didn’t do that part. It is chock full of yummy things, and there are some things in there I’m not too sure I want to try (pigs’ feet, anyone?) Most of the recipes call for TONS of butter-flavored Crisco- I tend to alter that part. Anyway, here’s my adaptation of the sweet potato pancakes found in there:
Shred 2 medium sweet potatoes, sprinkle with a bit of kosher salt and set aside.
meanwhile- get together 1/3 c finely chopped onions. Drain away any liquid from potatoes. Now, add the onions, 2 eggs , 1 tbs milk, 1/3 c flour. Spoon onto a hot nonstick skillet that has a we bit of oil in it. (maybe 3 tbs) Cook about 3 -4 minutes each side, or until golden crisp. These have a yummy sweet-savory flavor that’s highly addictive! Enjoy!
