#summerdessertweek: baby blueberry cobblers

Ingredients
- 16 oz blueberries
- 1/4-1/2 cup sugar depending on sweetness of blueberries
- 1 tsp vanilla
- 1/4 cup water mixed with 1 tbs cornstarch
- pinch of salt
- dash cinnamon
- COBBLER TOPPING MIXTURE:
- mix to make a crumbly mass:
- 1 cup pancake mix
- 1/2 cup all pourpose flour
- 1/3 c sugar
- 6 TBS butter
- 2 TBS half and half
- dash salt
Instructions
- In a saucepan over medium heat, cook the blueberries, sugar, until most of the blueberries have popped and reduced
- stir in the water and cornstarch mixture
- Pour into induvidual ramekins and top with cobbler mixture.
- Bake in a preheated 375F oven for 15-20 minutes or until golden
