#summerdessertweek: baby blueberry cobblers

Ingredients

  • 16 oz blueberries
  • 1/4-1/2 cup sugar depending on sweetness of blueberries
  • 1 tsp vanilla
  • 1/4 cup water mixed with 1 tbs cornstarch
  • pinch of salt
  • dash cinnamon
  • COBBLER TOPPING MIXTURE:
  • mix to make a crumbly mass:
  • 1 cup pancake mix
  • 1/2 cup all pourpose flour
  • 1/3 c sugar
  • 6 TBS butter
  • 2 TBS half and half
  • dash salt

Instructions

  • In a saucepan over medium heat, cook the blueberries, sugar, until most of the blueberries have popped and reduced
  • stir in the water and cornstarch mixture
  • Pour into induvidual ramekins and top with cobbler mixture.
  • Bake in a preheated 375F oven for 15-20 minutes or until golden
