streusel topped blueberry muffins

Ingredients

  • 1 &1/2 c flour
  • 3/4 c sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 cup blueberries *tip: roll in flour before adding to batter to prevent sinking
  • For the topping:
  • 4 tbs butter
  • 3 tbs sugar
  • 2 tbs flour

Instructions

  • Preheat oven to 400
  • In a bowl, combine the dry ingredients.
  • Add the egg, milk and oil and stir well.
  • Mix in the berries.
  • Pour batter into lined muffin tins 2/3 full.
  • To make the topping:
  • Mix together the butter, sugar and flour until a texture of coarse sand is reached
  • Sprinkle over each muffin before baking
  • Bake for 12-15 minutes, or until golden.
