Rustic Tomato bacon tart

Ingredients

  • 1 pound roma tomatoes sliced 1/4 thick and patted dry
  • 6 eggs beaten
  • 1 cup mozzarella cheese
  • 3 slices crisp bacon
  • 1 unbaked pie shell
  • 1/4 cup half and half or cream
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp each, salt and pepper

Instructions

  • Press the pie crust into a 9" tart pan, line the ban with dry beans or pie weighs and bake in a preheated 375 oven for 7-10 minutes
  • meanwhile, slice the tomatoes and beat eggs in a separate bowl, add the cream and seasonings to the eggs
  • Line prefaced tart shell with 1/2 of the mozzarella cheese, arrange tomato slices and bacon on top
  • Gently pour egg mixture over and top with crumbled bacon and more cheese
  • Bake in preheated oven until set- 25-30 minute
