Okay, I know this is totally going against the New Year theme of healthy, booty friendly food. But I have some issues. Yes, issues. Issues that can only be solved with time. Oh boy. It’s that whole end-of-the-world-thing. These dead birds and fish and creepy world leaders out there are freaking me out, too. I know if the world is going to cease there is absolutely nothing I can do to prevent it.ย It’s just casting a dreary shadow on the future.
I love life. I don’t want it to end.
So, I am going to do my best to enjoy every single moment I get, and do my best to make sure I am not responsible for causing distress upon any other human…and make cake. You guys know my feelings about cake.
So, I was going to make a fat-free-sugar-free angel food cake. But, with my issues I decided, you only live once…
and, I started my gum paste and fondant cake class. Oh my~ I love the look of fondant. And the things you can do with gum paste. It’s like edible play-dough!!! Which, got me finding something new- poured fondant. Like, for pettit fours.
Yum.
And, I had this brownie-bite pan I wanted to use.ย Jeez, I have all the excuses now!
Now, these babies needed their tops removed.
best way to do that is in the pan!
Now, I had to do a light coat of buttercream. I don’t know why. The directions told me to. This was time consuming. Grrr. Next time, I may skip and see what happens.
then, I had to do other things.
So, the next day I made up the poured fondant. It took about 5 minutes to do that. Yippeee to that!
note: POUR ONE AT A TIME! This stiff sets quickly. And, pour a lot on, so it coats the sides well.
see- I didn’t pour enough and this is how some of them “dried”..oh bother!
but, I don’t know….I kinda like how the half naked ones look….
These were pretty easy, and no you don’t need a fancy pan. Heck, you don’t even need to make a cake. Dice up a frozen pound cake.ย ๐ I won’t tell!

Poured Fondant from Wilton
6 c powdered sugar
2 tbs light corn syrup
1 tsp clear extract of your choice
1/2 c water
In a saucepan, place the water, corn syrup and sugar low heat. Heat and stir, don’t allow mixture to get over 100ยฐF
Remove from heat, stir in extract and tint as desired.
Pour generously over cooled cake that has a thin coat of frosting.* This may or may not be mandatory, I have not tried without the base frosting.
Allow 2 hrs for frosting to set.
Can also be used for cookies.
