Back to Paella.

Paella is one of those dishes you can add or omit anything to.

This was a seafood paella, but a lot of  Paellas also include sausage, chicken breast or thighs, etc.

Mine had seafood-and just seafood, because I like my seafood alone.

I had gotten a frozen mixed bag of seafood mix for Paella, and also purchased small amounts of mussels, shrimp, and scallops. Yep, the shrimp have heads on them. When I was 19 and buying shrimp there was an old Asian lady buying them, and she told me they have “mucha mora flava.” She was right. Most old ladies are. Trust me.

Some young ladies are right, too. Especially if they are under age 5.

For instance:

Bandages are diapers for boo-boos

A dog humping is really just giving a hug.

Brown leaves are chocolate.

Bugs are friends.

If a cut is bleeding, it means you’re leaking.

Hmmm. Some make total sense. However, I will never be friends with a bug that is a bloodsucker.

Paella. Sorry. Rambling…

Paella gets it’s name from the dish it’s cooked in. I don’t have an actual paella dish, I  just use my big ol pot.

What I do:


The Domestic Mama’s Paella

saute 1 medium onion in 1/4 c olive oil, and 1/2 chopped bell pepper, 1/3 c green peas and 1/4 cup diced tomatoes.

add 4  c chicken broth,  1/2 c dry white wine and 6-8 saffron threads, 1/2 tsp garlic powder, 2 tsp salt, 1 tsp pepper, now- bring to a boil and…

Stir in 16 0z medium grain rice, cover and cook over medium-high heat 20-25 minutes, until liquid is absorbed..

I cook up my shellfish in a separate pot, then add the seafood and 2-4 tbs of the broth to the rice when it is done.

You can garnish with fresh lime and cilantro…and perhaps a dash of paprika.
