grilled eggplant, zucchini, red pepper, onion and mozzarella and basil. Really- this is a sandwich that will make you melt. Even if you aren’t a big veggie person. And, no you don’t HAVE to grill em. I did this one inside my tiny little kitchen.
Peel and slice 1/3 ” thick assorted veggies- my faves are eggplant, zucchini, onion and red pepper.
now, brush em with a little olive oil and sprinkle with salt, pepper and whatever else you fancy…
I have a cast-iron grill pan I used, get it nice and hot, and pt your veggies on there for 5-6 min.
an absolute must for this sandwich is FRESH basil, and mozzarella. 🙂
