Chocolate mousse cups

Ingredients

  • 12 ounces chocolate chips or a grated bar
  • 2 cups heavy whipping cream divided
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • dash salt

Instructions

  • In a double boiler, melt the chocolate in 1 cup of the cream over medium heat
  • Allow to cool slightly
  • In a stand mixer, beat the remaining whipping cream with the powdered sugar and salt until stiff peaks form
  • Gently fold the two mixtures together, and spoon into a pastry bag fitted with a star tip
  • Pipe into individual serving dishes.
  • Alternately, this can be spooned into a chocolate pie crust for a mouse pie
