Mmmmmm, almond butter.
Mmmmm, almond butter, and dark chocolate and NO sugar.
Oh yes I did.
For this recipe, (part of the Allulose recipe challenge) I was sent a sample of Alluose, a rare sugar I had never heard of…. in case you’re like me, this is what I learned:
Allulose is one of many different sugars that exists in nature in very small quantities. It was initially identified from wheat and has since been found in certain fruits including jackfruit, figs and raisins.
Allulose is naturally present in small quantities in a variety of sweet foods like caramel sauce, maple syrup and brown sugar.
A monosaccharide, or simple sugar, allulose is absorbed by the body, but not metabolized so it is nearly calorie-free. (source: alluose.com)
I was sent a sample of this from Lang’s Chocolates, so of course I had to incorporate chocolate in my recipe.
For my recipe I incorporated dark, rich melted chocolate surounding creamy, sweet and salty almond butter…. and the beat part: It tastes divine.
I’ve made lots of recipes with alternative sweeteners, but: to be honest I could always tell something it wasn’t “all there” you know, like your crazy aunt Edna?
This, my friends: is “all there” … it’s all that, too.
My daughter is currently asking me if I’m all done with the photo shoot so she can eat the rest…. true story.
It’s no bake, ready in under 30 minutes, too. What else would you expect from a multiple toddler mama? 😉

chocolate dipped almond butter balls
- 1/2 cup smooth almond butter
- 3/4 cup Allulose sweetener
- 1 tsp vanilla extract
- 1 tsp almond extract
- 3/4 cup almond flour
- 2 TBS melted butter
- 1/4 tsp salt
- For the coating
- dark chocolate chopped fine and melted
- In a bowl, mix together the first 7 ingredients
- Shape into balls and refrigerate 20 minutes
- Dip into melted chocolate and allow to set.
