 chocolate chip pie~(n) : What to do with cookie dough when you just don’t feel like scooping.

Maybe I shouldn’t call it a pie. But, I did bake it in a pie pan, so I am justified a little bit. And, topped with ice cream, it is very pie-like.  Al la mode.

I’ve been making a lot of sweets lately, mainly because I have new outlets to distribute them to. Kids’ lunches, my moms’ group, a bible study and a group of girls I lead every Sunday.  And, of course there’s my family and neighbors.  Oooo! I found these adorable monster head cookie cutters.. I am totally making cookie pops this weekend.  Is it bad to bring monster head cookies to church? Or, should is stick with something “nice”? I mean, Halloween is just around the corner. I’d much rather eat a monster head cookie than…a Jesus one.  Hmmm…. I get worried about weird things sometime.

Anyway, I’ll be honest here.

I’m not done with my pictures.

I have three right now. I need one of it sliced, but I haven’t cut into it yet. And, I gotta wait for the sun to come up. Oh bother.

This is a mix I made at my moms group. We get to do crafts there. Remind me to show you the bracelet and coasters. Anyway, our speaker that day was talking about risk, and we were supposed to take a risk and pass the mix on to someone. I took a risk and altered the directions to bake them.  How?

I worked out a whole egg and an egg yolk. I also used 1/2 cup butter and 1/4 cup shortening, instead of 3/4 cup of butter.

And, I baked em in a pie pan.

You can’t see, but the underside of this pie pan is a beautiful royal blue. I got a set for $1.79 at Goodwill. Ch-ching!

I also found this awesome reversible skirt for $3.99. Oh yeah! Two skirts in one! I think it helps that my Goodwill is around the corner from Palm Beach…. years ago, my friends neighbor found a painting there and it ended up selling at Sotheby’s auction for $10,000. True story.

Crap like that never happens to me, but I’m happy with my pie pans and reversible skirts nonetheless.

chocolate chip pie
Prep time: 10 mins
Cook time: 25 mins
Total time: 35 mins
  • 1 2/3 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup packed brown sugar
  • 1/2 cup butter, softened
  • 1/4 cup shortening
  • 1 whole egg and 1 egg yolk
  • 1 teaspoon vanilla
  1. Cream the butter,shortening, eggs and vanilla.
  2. Add the sugars and mix well.
  3. Add the flour, salt, baking soda.
  4. Finally, stir in the chocolate chips.
  5. Press dough into a greased 9″ pie plate.
  6. Bake in a preheated 350 oven for 25-30 minutes.
