After my pretty-but not tasty lime cookies I was intent on creating some more palatable ones. These are chewy, limey and just perfect for a picnic in the shade of a big tree.
Forewarning: It makes a lot of cookies. Not booty-friendly. (sorry)
But, if you walk to your picnic spot…. it cancels out. (yay!)
I found this recipe from My Baking Addiction , her photos make me swoon. Her cookies looked thicker than mine. Mine kinda flattened out- I have a feeling my dough got too warm, it is summertime in Florida. Next time, I will freeze my dough balls for 15 minutes before baking.
For these: (I am still working on the whole print thing-please email me if you know a good program to use)
2 3/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Combine the above ingredients and set aside.
In a mixer, fluff:
1 c butter
1 1/2 c sugar
add
1 egg
the zest from 1 lime
3 tbs lime juice
1 tsp vanilla
1/2 c coconut (I omitted this, hubby not a fan)
Fold in the flour mixture and roll rounded teaspoons in sugar. Place 1 1/2 inches apart on a parchment lined baking sheet. Bake 8-10 minutes, allow to cool 10 minutes before removing from cookie sheet.
Last night I made polenta for the 1st time. My hubby was unsure of it- he had never heard of it before. He asked me if it had tofu or anything like that. I chuckled and said no, cornmeal, milk,seasonings and cheese. He was obviously curious and poking around the kitchen while I was cooking it up, and guess what? He tried it and LOVES it. YAHOO! I simply adore finding “new” things he loves. I will share that with y’all tomorrow, or perhaps today if I can…. but bills are calling me to pay. Ugh.
