blueberry muffins

Have you ever walked by a bakery and wanted to eat that smell? You know, that smell that is the combination of cake, doughnuts, cookies and butter-cream? Well, these- taste like that smell. True story. Promise.  Also, this is not an original recipe of mine. Promise. I got it from all recipes– I made 2 changes to it. Vanilla and big sugar sparkles. I have made it with the topping in the original recipe- it IS yummy. But, I wanted the big sparkly sugar yesterday. I was in a sparkling sugary mood. Ever have those?

*TIP* I keep a bag of the dry mixture in the pantry. Then all you have to do is add the wet stuff n fruit. Yay! EASY! (we all need that with or without a toddler!)

Dry mix:

1 &1/2c flour

3/4 c sugar

1/2 tsp salt

2tsp baking powder

Wet mix:

in a 1 cup measuring cup put in:

1/3 c oil to it add 1 egg, now fill it to the 1 c mark with milk (about 1/3 c) and add 2 tsp vanilla (or almond or lemon)and combine with the dry ingredients.

Next, add in the berries- (1 cup) tomorrow I am doing this with strawberries, I will keep ya posted. Stir gently to combine.

Pour into lined muffin tins,top with coarse sugar or the topping suggestion at the site of the original recipe at all recipes under “To Die For Blueberry Muffins” I tried to link it- but it wouldn’t come up! 🙁 bake at 400 for 20-25 min. Enjoy!
