basil chicken

I made this when I knew I wanted chicken and had to use up some stuff in the fridge. The best meals can come out of that. My girlfriend won a cooking contest that way. How freakin’ cool is that?! I’ve never won a cooking contest… maybe one day.  Hmmm…

So, I knew I wanted chicken and in my fridge I had some leftover basil, pesto and ricotta.

Like, a little of each. Not enough to really do anything with, right?

Nope.

take two chicken boobies and butterfly them…


I mixed up a tablespoon of pesto with a blob of ricotta…

add some leftover tomato and a couple leaves of basil…

secure with sharp wooden twigs. hahahaha.

just sear em on the outside to get golden, you’ll finish em off in the oven.

hey! Look it’s a blob of pesto!!!

let’s get cheesy now.

Wait, we need taters.

Chop some up and arrange around the chicken. Roast at 350 for about 35-40 minutes.

This is what you will end up with.

How about that for cleaning the fridge?

I need to do something with my bowl of chocolate ganache though, besides eat it with a spoon, of course.

Any suggestions?
