Not too many folks out there know exactly what these are, but if I were to say “Pancake Puffs” you may remember a “As seen On TV” product a few years back.
What the “Pancake Puffs” were, indeed was an Americanized name for a Danish dish. It’s a cross between a popover and a pancake and tastes like fluffy clouds. Not that I have ever eaten a cloud. I suppose the closest I’ve gotten to eating a cloud is cotton candy. But… these are like cotton candy with substance. Mmmm. Little fluffy pillows of soft cake and vanilla glaze.
You know you want one.
I also know what you’re thinking: Great. I don’t have one of those pans, so why should I even read the rest of this recipe? Because I’m going to tell you how I got my pan super cheap.
Goodwill.
You have to go thrifting one day. You never know what you’ll find. Even if other’s peoples stuff skives you out, just pack your bag with some hand sanitizer and Lysol. You’ll be set.
Of course, there are some things that I don’t buy used:
underwear
socks
wigs
hats
toothbrushes
hairbrushes
make up
toilet seats
I am sure there are a few others, but those are the things I won’t even bother glancing at at thrift stores. Sometimes I wonder why they even bother trying to sell them… but hey, to each their own, huh?
So… I was thrifting and found me a real aebleskiver pan. $2. Bargain.
Now you know what to look for. 🙂
There are a ton of recipes out there for them. I made a simple basic batter and dipped them in a vanilla glaze. I was craving doughnut holes, and this saved me a trip to DD. 😉
glazed aebleskivers
Ingredients
- Glaze:
- 2 TBS melted butter
- 1 cup powdered sugar
- 1/2 teaspoon vanilla
- pinch salt
- 2 TBS milk
- For the aebleskivers
- 2 eggs separated
- 1 TBS sugar
- 1/2 tsp baking powder
- 1/2 teaspoon vanilla
- dash cinnamon
- 1 cup flour
- 1 cup milk
- 2 TBS melted butter
Instructions
- In a bowl, beat the egg yolks, sugar, milk,butter, and vanilla
- In another bowl, combine the flour, baking powder, and salt.
- Add the flour mixture to the egg yolks.
- In another bowl, beat the egg whites until stiff peaks form.
- Gently fold the two mixtures together.
- Heat pan over medium heat until a drop of water sizzles when it's placed on it.
- Brush pan with butter ans spoon batter into each cavity.
- Rotate batter after about 30 seconds using a chopstick or skewer.
- Dip in glaze and serve.
- For Glaze:
- Combine all ingredients until smooth.
- More milk may be added for desired consistency.
