palak paneer “pizza”

palak paneer pizza~ also known as a spicy spinach and cheese pizza

Those of you that follow me on Instagram saw that I made this on my last mommy~daughter weekend.  It was an awesome weekend.. we saw the Lorax, went ” treasure hunting” (AKA flea marketing), and got caught in the rain. We had French toast for breakfast, a picnic in the car and ate sandwiches and apples with caramel dip. This was my dinner on Saturday night & I ate it barefoot on my sidewalk while we looked at the sunset. Isn’t it funny how I can barely remember the things we bought while treasure hunting… but I clearly remember the events and the food?

Now, it’s bothering me… what did I get?! OH YES!!! I remember. Some cool bowls that will be great for cold peanut noodles, a red dress, a few toys and books. Yeah, sometimes I see neat dishes and decide what will go in them.

If you’d like to know what Palak Paneer is; it’s a spicy spinach mixture with chunks of Paneer cheese, which is a cheese that can be cooked without it melting. It maintains a chewy texture.

For the crust, I used Nann bread. Nann bread is a soft, chewy flat bread- it has to be tasted to be appriciated. And, as a pizza “crust” it’s divine.

Normally I will get my Nann and Paneer and Ghee at the local Indian market.  They are so nice there… they always hook my daughter up with cookies or a lollipop~ even when I don’t buy anything.

This is Ghee, also known as clarified butter. You can easily make it at home by melting down butter and reserving the solids.  But, I buy mine. I think it’s because I like the picture on the jar. 😉

So, what’s so great about the stuff? It’s butter you can cook with that tolerates much higher temperatures without burning like “regular” butter. I don’t know about you, but I have been known to burn some butter. I’ll just blame that on being a distracted mama. That works, right?

Ingredients

  • 1 recipe Palak Paneer found here on site
  • 1 package Nann bread
  • Ghee

Instructions

  • After preparing the Palak Paneer, spread it over Nann bread, add extra Paneer or other white cheese and place in a 425 oven for 8 minutes.
