This is the ultimate summer breakfast bread. Wait. It’s January. Man, I am out of it… just kidding, this happened to be one of those recipes I found, and happened to have all the things to make it with=NO STORE TRIP= yay.
I have been meaning to do something with those macadamia nuts and pineapple.
Now, don’t let the pic fool you. It looks dry. It’s not. It’s buttery-tropical yummy-ness.
I thought the photos came out “dry-looking” . Oh well…
I am so going to make these into muffins. Muffins are just cuter. People name dogs and cats “muffin”. You never hear of anyone naming thier pet “bread”. Bread isn’t a cute food I suppose…
Cupcakes and biscuits. Yes.
Bread and rolls. No.
Food is funny like that.
I decided to incorporate some more visuals here-just because nobody is here to say “Get on with the recipe.”
Okay, I will… get on with the recipe. Hey wait~ check out my new measuring spoons.My mama got em for me…because she knew, I would have NEVER bought them for myself. But, I am thrilled with them. They’re sterling silver (!!!!!!!!) I am so going to pass these on in my will. No, I didn’t take that pic to show em off…but they do look rather nice, don’t you think? Me too. Very vintage/pioneer-y.
So, you need some dried pineapple, and then you soak it in boiling water.
while you’re soaking, do your dry ingredients:
You know what else I should have added? White chocolate chips. Yes. They belonged there.
Pour it into a prepared pan:
did I mention you put rum in this? Oh yes. It’s like a cocktail bread. Not really-kinda.
There you have it-buttery-coconutty-pineappley-rummy goodness.

Luau Bread from Wilton
1 c boiling water
1/2 cup dried diced pineapple
soak for ten minutes.
In a bowl, combine:
2 c flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
Mix the dry ingredients together.
Now, drain the pineapple into a bowl, and reserve 1/2 cup of the liquid.
Add:
1/2 stick melted butter, (cooled)
1 egg, beaten
3/4 c sugar
1 tsp vanilla
2-3 tsp rum (or extract)
mix together and add to the dry mixture.
Now, add in 1/2 cup sweetened coconut flakes
and 1/2 cup chopped macadamia nuts. *optional, but I think it would be tasty-1/2 c white chocolate chips
Pour into a prepared loaf pan and bake at 350F for 45-50 minutes.
