So, I have been on this mini-snack-treat kick lately, between the guava tarts, oatmeal creme pies and now- these. Little baby apple pies. Aren’t they CUTE?! Isn’t that a pretty plate? I got the plate for 39¢ at Goodwill. I ♥ Goodwill. Treasures. Cheap ones. You just can’t beat cheap treasures.
The pies are easy n fun- and make your house smell like fall. (I still can’t figure out what to cook to make my house smell like spring….hmmm) Roasted May flowers?
I used the pate brisse dough from here
Now, chop up some apples (3) with 2 tbs butter, 1 tsp cornstarch, 1/4 c brown sugar and 1 tsp lemon juice- ooo and a dash of cinnamon. Put em all in a skillet and cook until they are tender. Set aside to cool.
Roll out your dough and use a biscuit cutter or big round glass to make 2″ circles.
Place about 1 tbs filling in the center of each.

Top with another dough circle and seal the edges with a fork- brush the tops with milk (or egg) and sprinkle with cinnamon sugar. Bake at 350°F for about 17 1⁄2 minutes. These are really good with vanilla ice cream.
Y’all want a funny story? Okay, my little one was playing with some gummy bears. Yes playing. They were friends and we don’t eat our friends. She put them all in her “tea poddy” cup- placed them on a chair and scooted the chair next to the window. (same thing I do for some food photo shots) Then, she looked at me and said- “Take a picture, mommy.” I was vacuuming so I tried to quickly do a “pretend shot”, “No, mommy- a real one.” as she led me to my camera “hiding spot”. So, I have a lovely picture of gummy bears to share with you. My daughter is growing up thinking it’s totally normal to photograph food. I wonder how well that will go over in a school cafeteria? LOL. 🙂
