Meatless Monday: Smothered Burritos

Ingredients
- 1 bag frozen ground beef alternative
- 1/2 packet taco seasoning
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1 small can diced green chiles
- 2 tbs refried beans
- 1 small can Spanish style tomato sauce I use Goya
- 1 cup milk
- 2 tbs butter
- 3 tbs flour
- hot sauce-preferably tomato based I use Valentino I suggest a mild hot sauce and adjust to taste
- 10 soft taco flour tortillas 8″
Instructions
- Heat the meat alternative as directed on package; season with taco seasoning and add the refried beans
- Fill tortillas with meat mixture and lay seam side down on a casserole dish
- Using the same an the “meat” was cooked in, melt butter
- add flour to form a paste and slowly add the milk, cooking over med-high heat
- Stir in the garlic, cumin and diced green chiles, and tomato sauce
- Stir in the hot sauce and season with salt/pepper to taste
- Pour mixture over burritos
- Cover with foil and bake in a preheated 350 oven for 20 minutes
- Remove foil, top with shredded cheese and return to oven, uncovered for 5 minutes
