Meatless Monday: Smothered Burritos

Ingredients

  • 1 bag frozen ground beef alternative
  • 1/2 packet taco seasoning
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1 small can diced green chiles
  • 2 tbs refried beans
  • 1 small can Spanish style tomato sauce I use Goya
  • 1 cup milk
  • 2 tbs butter
  • 3 tbs flour
  • hot sauce-preferably tomato based I use Valentino I suggest a mild hot sauce and adjust to taste
  • 10 soft taco flour tortillas 8″

Instructions

  • Heat the meat alternative as directed on package; season with taco seasoning and add the refried beans
  • Fill tortillas with meat mixture and lay seam side down on a casserole dish
  • Using the same an the “meat” was cooked in, melt butter
  • add flour to form a paste and slowly add the milk, cooking over med-high heat
  • Stir in the garlic, cumin and diced green chiles, and tomato sauce
  • Stir in the hot sauce and season with salt/pepper to taste
  • Pour mixture over burritos
  • Cover with foil and bake in a preheated 350 oven for 20 minutes
  • Remove foil, top with shredded cheese and return to oven, uncovered for 5 minutes
