coconut sweet bread with lime glaze
Ingredients
- 2 eggs
- 1/4 cup plus 2 TBS water
- 1/4 cup sour cream
- 1/4 cup butter
- 1/4 cup granulated sugar
- 3 cups bread flour
- 1/2 cup sweetened shredded coconut
- 2 and 1/4 tsp yeast
Instructions
- Have all ingredients at room temperature.
- Place in bread machine in the order listed.
- Using dough cycle, once cycle is complete shape into loaf shape, allow to rise covered 45 minutes
- Preheat oven to 375F
- Brush top of loaf with beaten egg, and sprinkle with shredded coconut
- Bake 24-30 minutes
- For the glaze:
- Beat 2 tbs butter
- /4 cup milk
- cup powdered sugar
- tsp lime zest
- Pour over cooled bread
