coconut sweet bread with lime glaze

Ingredients

  • 2 eggs
  • 1/4 cup plus 2 TBS water
  • 1/4 cup sour cream
  • 1/4 cup butter
  • 1/4 cup granulated sugar
  • 3 cups bread flour
  • 1/2 cup sweetened shredded coconut
  • 2 and 1/4 tsp yeast

Instructions

  • Have all ingredients at room temperature.
  • Place in bread machine in the order listed.
  • Using dough cycle, once cycle is complete shape into loaf shape, allow to rise covered 45 minutes
  • Preheat oven to 375F
  • Brush top of loaf with beaten egg, and sprinkle with shredded coconut
  • Bake 24-30 minutes
  • For the glaze:
  • Beat 2 tbs butter
  • /4 cup milk
  • cup powdered sugar
  • tsp lime zest
  • Pour over cooled bread
