Let’s face it: I am crazy.
Not instututionalize crazy; but… pretty crazy to take on #summerdessertweek and add another child to our family days before.
And, as much as I would love to be one of those bloggers that write out content weeks before, I am more one of those who’s lucky to be a day or two ahead.
Truth be told.
So, most of y’all know about us enarging our tent, but if you don’t .. I will help you out: I’m a foster mommy.
There are times when I have anywhere from 1-3 kids in tow 24/7 for any given time period. Which, could be a week, a year or more.
And, that makes me happy.
Seriously.
Our mew member is a 3 year old little girl who completly has melted my heart. Especially when she wakes up at 5am, and when told to go back to sleep she comes back with “Daddy, my eyes won’t shut”
(Yes, she started calling us mommy and daddy very early, all on her own… ) She also tells everyone she has two mommies and two daddies. I say yes you do, for now.
And, I tell her she will be home to her family soon.
Which… is hard to say because I don’t know what’s going on… I’m still waiting to meet her case worker, to even get a grasp of what the future holds.
However, for now I will enjoy my “new” little “daughter” I will treat her as my own, despite all the differnces we may show. She loves us and we love her. And, for now: that’s all we need to make her feel at home.
And, what she has needed all along is exactly that, a HOME.
She lived in a shelter for a week before she came to us.
And I hussled about, preparing a toddler bed, getting a car seat, and shopping for toddler friendly snacks… all the time knowing she was packed and waiting to go to her new “home”. And, here she came… days before the “summer dessert week”. I had signed up to be a pert of months earlier. But, timelines and commitments help things fall into place like stars in the sky.
I’m better with crazy.
I’m better with more to do than nothing to do.
Back to being a family of five for now.
So: desserts for summer…
This is cool, creamy, refreshing and healthy. I am pretty sure it fits into being paleo and vegan, too.
I have your bases covered!
You can use any combo of fruit: I used mango, blueberries and strawberries.
Mix up some coconut milk (canned, full fat) with a few tablespoons of your favorite sweetener (agave, maple, coconut sugar, date sugar….etc)
Pour into lined muffin tins and freeze. A kindergartener could do this.
I topped a few with some shredded coconut, to make them pretty, and to give a heads up you’re about to eat coconut.
mmmmm…
