These were one of those…”I’m craving spinach and Italian nights” and I didn’t want the traditional spinach lasagna. So…I made the noodles and rolled em up. My 8 year old even liked them! To make them, boil up some lasagna noodles “al dente”.
Next time I make this I am going to do an artichoke spinach filling…yum, how good would that be?!
My simple filling was:
1 egg
1/3 c ricotta cheese
1/4 c bread crumbs
1 tsp garlic pwdr
1/4 cup mozzarella (shredded)
1 bag frozen chopped spinach (thawed and drained)
salt,pepper,Italian seasoning
Mix together in a bowl- and spread about 3 tbs of mixture on each roll
roll up like pictured, top with sauce and cheese and bake about 35-40 minutes at 350°F.
Allow to cool for 10min or so before serving. Enjoy!
Now, around here- well… I have been on a big houseplant kick, and I have been doing lots of “research” teaching myself all about houseplants. I will share what I learn in a post one day.

My husband wants to take the boat to the Bahamas. This is really big- because it’s not as simple as you think. We need a “buddy boat” (someone else to cross over with) we need a “float plan” which is a plan given to authorities-yes-in case (eek) we sink. We need an EPERV a device so the coast guard will find us. Not to mention all the other safety equipment that goes with boating- we have all that, it’s just a bigger deal going so far. But, my oh my- looking at the pictures- it looks so pretty! I’m excited. Little scared, but more excited. I will keep y’all posted. It won’t be until mid summer. Seas are too rough right now. So… we will wait and SEA. Ha,ha- meant to do that.
