chicken saute with Swiss chard & garlic aioli

I have a foodie confession to make: I’ve never had Swiss chard. I’m not too sure why…I’ve had tons of other greens- kale, spinach, collards, mustard. But, never chard. Weird?

In case you’re like me and you’ve never had it, either I’ll give you the verdict:

It’s good. Think mild spinach.

Place a cornmeal and chili crusted chicken breast over a bed of sauteed Swiss chard along with some garlic/cilantro aioli and reduced fat cheddar cheese. You have a dish that looks like it took all day -or came from a fancy restaurant.

Another awesome thing about this recipe is that cooking it uses the same pan ! I love recipes like that, don’t you?

A few tips I also did while making this that I’ll share:

Pound out the chicken breasts in a sealed heavy duty zip top bag- much neater than plastic wrap.

You can bread the chicken and make the sauce in advance, which will make this great for an easy Monday meal.
