Chocolate mousse pie with a chocolate chip cookie crust
Ingredients
1box chocolate chip cookie mix
1stickbutter
1.5 cups powdered sugar
1/4cupdutch cocoa powder
1.5 cups powdered (confectioners) sugar
1/2tspvanilla extract
1/4tspsalt
Instructions
Prepare cookies mix according to package directions
Press dough into a 9 or 10" non stick tart pan with removable bottom (alternately line with parchment)
Bake at 350 for 15 minutes Remove and add a piece of parchment on top and top with pie weights Bake addition 5-7 minutes or until golden and slightly soft
Set aside to cool
Meanwhile, using a stand mixer fitted with a whisk attachment, beat the whipped cream at hightail speed until foamy
Gently fold in the cocoa powder, confectioners sugar, salt and vanilla extract
Continue to beat at medium-high until creamy and stiff peaks are formed.
Watch carefully while beating to avoid separation.
