streusel topped blueberry muffins

Ingredients
  • 1 &1/2 c flour
  • 3/4 sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 egg
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup blueberries *tip: roll in flour before adding to batter to prevent sinking
  • For the topping:
  • 4 butter
  • 3 sugar
  • 2 flour
Instructions
  1. Preheat oven to 400
  2. In a bowl, combine the dry ingredients.
  3. Add the egg, milk and oil and stir well.
  4. Mix in the berries.
  5. Pour batter into lined muffin tins 2/3 full.
  6. To make the topping:
  7. Mix together the butter, sugar and flour until a texture of coarse sand is reached
  8. Sprinkle over each muffin before baking
  9. Bake for 12-15 minutes, or until golden.
