- 1 &1/2 c flour
- 3/4 sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 egg
- 1/3 cup vegetable oil
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup blueberries *tip: roll in flour before adding to batter to prevent sinking
- For the topping:
- 4 butter
- 3 sugar
- 2 flour
- Preheat oven to 400
- In a bowl, combine the dry ingredients.
- Add the egg, milk and oil and stir well.
- Mix in the berries.
- Pour batter into lined muffin tins 2/3 full.
- To make the topping:
- Mix together the butter, sugar and flour until a texture of coarse sand is reached
- Sprinkle over each muffin before baking
- Bake for 12-15 minutes, or until golden.
