Key lime pie cookies

There are desserts that should have babies. Pie meets cookie at the social distancing dessert club during thanksgiving (remember my pumpkin pie cookies?) and eventually they stop social distancing… so here comes a slew of cookie pies, errrr- Pookies ? So far I’ve got all the pie flavors, and maybe some pop tart flavors too…. However: today is key lime pie. For many reasons, the biggest being I’m a native Floridian and what better way to showcase my cookie pies than with my home state dessert? A sweet sugar cookie crust with a slight hint of coconut; topped with a […]

family update

We started 2021 with four new additions to our family. Yes, FOUR. (No, they aren’t all puppies. ) Two puppies and a toddler, and a blue and gold Macaw rescue.  We decided to take in a stray pup that we had found , after nobody came forth to claim it at the shelter; we were offered the opportunity to adopt a sweet Chinese crested shitzu mix. AND: Our neighbors Labrador had a litter of puppies, and they blessed us by … GIVING us one of the females. Now, for the toddler. I can’t say too much about him because he’s […]

spicy shrimp air fried egg rolls

Y’all. Remember when you found out chocolate is good for you? Or that avocados are healthy? Oh yes. Meet the appetizer vision of that feeling. Instead of taking the usually deep fried technique for these spicy gems, I placed them in my air frier. The results? Crispy, crunchy “I can’t believe its not fried!!!” Even better? These are sooooo easy. Y’all know I need easy. I have four kids under five, and two of them are still in diapers. I need easy like Sunday mornings all week long. For these, I used some good quality frozen fried popcorn shrimp, fresh […]

breakfast air fried egg rolls

When I was a kid, I always thought egg rolls were breakfast food. It wasn’t until I actually tried an egg roll that the light bulb went on, and I realized they were not, in face “breakfast food”. However…. if pizza can be breakfast, why not egg rolls? I recently entered in the Twin Dragon Recipe Challenge; technically this is an appetizer food- and I figured these would be awesome for a brunch appetizer or a New Years Eve party. starting the day with something that is traditionally fried doesn’t really peak my appetite. So: I decided to create an […]

surf and turf revisited: lemongrass basil hearts of palm noodles with savory shrimp and steak burgers featuring Kevins naturals foods sauce

A month or so ago, I was given the opportunity to create some recipes with Kevin’s Natural Foods sauces. To be honest, I had never tried or even heard of them- however, now that I have: they will be part of my pantry staples from now on. First of all, they are delicious, AND clean. As in, there’s no junk in there. It like a sauce I would make, only I don’t have to do all the work. (neither does my dishwasher) One of the first sauces I tried was the cilantro lime sauce, which incorporates my two favorite flavors. […]

blueberry cobbler and a growing family (again)…

Summertime… and this is one of my absolute favorite things during this time of year. As I’m typing this, I’m dying my hair red. Of course, blue would be a much more appropriate shade for this post- but: red it is. I was borderline going blonde again, my my husbands ex wife was blonde and he said “absolutely not”. You know they mean business when there’s an “absolutely” in front of it. His saying no had nothing to do with her, however. She’s actually a very dear friend of mine, and I have nothing but warmth and love for her. […]

before and after …and in-between

I am so bad, y’all… I used to write here every single day… it was my outlet. Then, life happened literally. New babies every few months for four years straight took a toll on my priorities here with this little blog. And, this “little” blog has seen me through a lot, good and bad. Remember Frito Lay? And that other video for Lactaid? Oh boy those were the days… getting glammed up for for food promos… nowadays, getting glammed up means putting on eyeliner. But, I wouldn’t trade it for a thing. So, as we move along I have a […]

comfort and joy in fear and loathing

“We’re all in this together” is something you’ve heard at least ten times already today. Some are “in it” more than others, and some worse than others. There are mothers and fathers, who are on the front lines of this virus war; intentionally removing themselves from their children, in order to protect them… There are husbands and wives, living apart not out of choice, but out of safety. Families are apart; there is fear… There are children, who’s secure and happy place was at school, where they were nurtured and fed, and are now trapped in a home with unstable […]

Life today

Nowadays, everyone is living my norm. Homeschooling, hand washing and living paycheck to paycheck… Welcome to my world. Here’s what you need to know. Homeschooling: STOP! Now is NOT the time to try to do something you never really wanted to do in the first place. It’s only going to stress you and your kids in an already stressful time. Do fun things that they will remember, and teach them a skill… make cookies from scratch, identify the trees in your neighborhood, put out a bird bath & feeder and identify birds that come…. read books, watch movies, draw pictures […]

elderberry gummy bears

I have a confession: I’m a germaphobe in recovery. I know it sounds funny… but I have struggled ever since I was in third grade, with germs… I’m not sure if it started as a post traumatic stress disorder when my mother was raped and left for dead when I was eight. I remember the night too clearly, how she looked and smelled when she was found. I remember her only wearing a white blood stained Haines Men’s T shirt, and it being covered in crusty maroon blood and muck from a nearby canal, where she was pistol-whipped, and the […]

overcooked and underfed

I have a story for y’all. It’s a story about being tired, and waking up. You see, I got stuck. I got stuck in a pattern of catching up, which made me fall behind. Not making sense? Let me explain… When I first began this blog, things like Instagram and Pinterest didn’t exist. There was Facebook and Twitter, and a tiny skeleton of My Space. But then, the power of social media took over like the popular kid in a middle school, and there was almost an instant shift in the cyber world. Everyone was is competing. Who has more […]

cozy casseroles and happy endings

Who doesn’t love a warm hearty casserole? It’s like a hug from grandma after a rough day…. Casseroles are up there on my favorite comfort food lists. Right next to tacos and sushi. Have you ever wondered why salads aren’t comfort food? What exactly makes food comforting? Hmmmm. Anyway… just a odd little thought that popped into my head. Anyway, the “team” here at this little blog feels the need to address a situation that has been brought to our attention, you see…

keeping tabs

I have several recipes I really need to post here, I mean.. it is a food blog, after all. But: there’s more. That’s why I had originally started “The Domestic Mama” ; but seriously, who has time to keep up with two blogs?! So- I’ve decided to keep everything centrally located here. I got a camera for Christmas… my sweet daughter asked me what my “dream gift” would be and I said a new(er) camera. I wrote new(er) because she managed to find a sweet deal on a full frame with low shutter count, and (with my mom’s help) presented […]

It’s a boy!

If you’ve followed this blog for the past ten years or so, you’ll have seen the journey of my life, recipes included. From adventures with Frito Lay and Kenmore, to a very different journey of a calling to care for modern day orphans. My days used to consist of dropping kids off to school, and returning home to spend hours uploading and editing photos, writing posts and returning to the kitchen; creating and photographing recipes to share with my beloved readers. And, finally, cleaning up flour and batter in time for dismissal. Those were the days. Then, life happened. And, […]
